We Won't Go Until We Get Some...

So bring it RIGHT HERE!

What would Christmas be without Figgy Pudding? I dare say, mine wouldn't be nearly as TASTY. YOU MUST TRY THIS! Every Christmas my mom makes our rendition of "Figgy Pudding"...also called "Sticky Toffee Pudding" and it is to die for. The caramel sauce is the best...I could pour it over anything. I made it this year for my work Christmas party and everyone loved it. Here's the recipe:

"Figgy Pudding" (Sticky Toffee Pudding)


Pudding Cake:
-2 1/2 cups water
-1 3/4 cups chopped dates (or chopped figs if in season)
-2 tsp. baking soda
-1 stick butter
-1 1/3 cups sugar
-4 eggs
-3 cups flour
-2 tsp. baking soda

Directions: Preheat oven to 325 degrees. Bring water to a boil in large saucepan. Add chopped dates and boil for 1 min. Once boiled, add 2 tsp. soda (careful, the dates foam up quickly). Set date mix aside and let cool.

In other bowl, mix butter and sugar together until smooth. Beat in 4 eggs, 1 at a time. Pour in cooled date mix (including the water) and stir together. Slowly mix in 3 cups flour and remaining 2 tsp. soda until well combined.

Grease a 9X13 glass dish, pour in mix and bake in a water bath (set glass dish in larger dish filled with water just enough cover outsides of glass dish). Loosely cover pans with tin foil so moisture stays inside. Back for 50-55 minutes, removing the tin foil once the cake starts to rise (about half way through).

Caramel Sauce:
-1 1/2 cups brown sugar
-1 3/4 sticks butter
-1 cup heavy whipping cream

Directions:
Bring to boil over medium heat, simmer on low for 4-5 minutes. Do not overcook!

I've never cooked with dates or figs in my life. I think we'll have to try this one...
